South Indian filter coffee is brewed slowly in a metal filter, often with a little chicory, then mixed with hot milk and sugar. It is poured back and forth between a tumbler and a dabarah to cool it and make it frothy. Karnataka grows most of India's coffee, in Kodagu, Chikkamagaluru and Hassan.
